WOOD VARIETIES: 

APPLE: Great tasting fruity , mildly sweet smoke flavor considered by many to be the best all around cooking wood. 
RECOMMENDED: Good with pork, beef, and pultry.

HICKORY: The granddaddy of smoking wood has a sweet to strong smoky flavor. Very popular with bbq’ers.
RECOMMENDED: Good with beef, pork, and ham.

MAPLE: Milder than hickory with a subtle butter rich flavor. 
RECOMMENDED: Good with poultry, pork, seafood, and game birds.

NECTARINE: Fruity, mild smoke that has similar smoke characteristics to peach.
RECOMMENDED: Good with most types of meat, including turkey, pork and fish.

OAK: Strong smoke flavor, hot flame with milder than hickory flavor. 
RECOMMENDED: Good to use with fish, pork, and other meats.

PEACH: Fruity sweet flavor. 
RECOMMENDED: Good with most types of meat including chicken, turkey, pork, and fish.
